If you are searching for a real cream cake in Toronto — the soft, fresh, fruit-and-cream kind that East-Asian bakeries are famous for — 6 Cloud is where it lives. Our signature is a Japanese fresh-cream cake, but we build it our own way. Instead of a regular sponge, we bake a cloud-soft Japanese soufflé into a round disc, chill it until it sets, then slice it horizontally and fill the middle with whipped fresh cream and fruit. The result is a fresh-cream cake in cream-sando form: all the soft sponge, cream and fruit you want from a Japanese cake, in a portion you can finish on a walk.
Why call it a cream cake? Because that is genuinely what it is. The soufflé we bake is a cake-like sponge — airy, springy and tender, the same family as a Japanese soft cake or a castella. We slice it like a layer cake and fill it with the same fresh whipped cream and fruit a fruit-cream cake uses. The only difference from a tall whole cake is the shape: ours is a single, perfectly portioned round, so the cross-section shows off the cream and fruit in every bite.
The texture is the whole point, and it is what makes this a soft, fluffy cake rather than a dense one. Cold soufflé sponge is pillowy and light — not wet like a pancake, not heavy like buttercream cake. Paired with cream whipped soft and fruit cut fresh, every bite is balanced: sweet but never cloying. We are a dessert shop, not a custom-cake bakery, so we do not currently make whole tiered birthday cakes, custom wedding cakes or bento-style lettering cakes to order. What we do make is the real thing for anyone craving soft Japanese cream cake today: walk in, grab one, or build a box to share. They travel beautifully chilled, photograph gorgeously on the cross-section, and taste like nothing else in the city.
