A Japanese dessert, made the 6 Cloud way
If you have been hunting for a memorable Japanese dessert in Toronto, this is it — our signature soufflé cream sando. A cream sando, short for sandwich, is a Japanese café classic: airy bread or cake hugging a generous layer of fresh cream and seasonal fruit. At 6 Cloud we took that idea and built it around our own twist. Instead of plain milk bread, we bake a cold, fluffy Japanese soufflé into a round disc, let it set, then slice it horizontally and fill it with whipped fresh cream and fruit.
Let us be clear about what this is not, because the words get tangled online. Our soufflé cream sando is not hot. It is not molten and there is no lava centre. It is not a soufflé pancake stacked on a griddle. It is a chilled, pillow-soft soufflé that holds its shape, sliced and stuffed like a fruit sando — light enough to finish on a walk down Yonge Street, rich enough to feel like a real dessert.
The texture is the whole point. Cold soufflé is springy and cloud-like, not dense like cake and not wet like a pancake.
